Pumpkin Recipes: Breakfast
We’re pretty darn big fans of breakfast, especially on the weekends when we can go a bit slower. We started this pumpkin endeavor with pumpkin pancakes (and of course, we added chocolate chips!).
Pumpkin Cinnamon Rolls
This is cheating a little bit because I bought Pumpkin Cinnamon Rolls from Trader Joes and just heated them in the oven, but I we have made this recipe before and it’s DELISH!
Caleigh woke up this past weekend and asked specifically for pumpkin scones. Since we had a can of pumpkin in the fridge, I thought we’d give it a shot! I also had leftover cinnamon sugar mix, so this was doubly perfect! Again, we added chocolate chips and went heavy on the cinnamon sugar topping because breakfast is just morning dessert, right? These will 100% fill you up, but they are yummy. Warm them up before you eat them!
Pumpkin Recipes: Dessert
This is my favorite category. I love to bake (and so does Cal!), so we tend to go overboard when it comes to treats. I’m sharing only the pumpkin recipes we loved.
Pumpkin Chocolate Chip Cookies
Basic, I know, but these are a play on the oatmeal ones we made last year (and I think Trader Joe’s has a mix for it this year!). Simple, soft, and will 100% make again!
Pumpkin Hot Chocolate
Ok, so this was new for us this year. I posted this to my Instagram Stories and I cannot stress how much you need this recipe in your life. If you love fall, this is your new fave beverage, I swear. (Also, how cute it this mug?!)
Pumpkin Recipes: Savory
This gnocchi recipe is vegan, but we’re not, so I used the ingredients I had on hand, including frozen gnocchi that was just hanging out in the depths of my freezer! This was SO SO SO good. It’s rich and complex in flavor and the exact comfort food you need on a chilly night. Added bonus – your house will smell amazing!
